Amazing lunch (or dinner) idea

I made some turkey lettuce wraps for lunch today, and they were SO good and very satisfying! I combined this meal with cucumber and avocado topped with balsamic vinegar, salt, pepper, and red pepper flakes. This was first time I wasn't hungry 10 minutes later. I really felt full.

Turkey Lettuce Wraps:
1 pkg. ground turkey
grated fresh ginger
water chestnuts (chopped)
green onion (chopped)
mushrooms (chopped)
(you could add peppers, or tomatoes, or baby corn, too)
mint, basil, cilantro (finely chopped)
1 clove crushed garlic
1/2 cup vegetable stock
soy sauce to taste (low sodium)
seasonings to taste (I used salt, pepper, a little garlic salt, and a dash of cumin)
Lettuce for wrapping (I had red leaf on hand and it worked great)


Spray the pan with Pam so you don't have to use oil. Brown the turkey with garlic and grated ginger (to taste). Add chopped veggies and herbs, then pour in veggie stock and a bit of soy sauce. I used seasoning sparingly, and just drizzled the soy sauce once around the pan. Let this all simmer for a few minutes. Makes a lot of servings. Maybe 4? I made three lettuce wraps for lunch. They were really delicious. They have a savory, garlic flavor, as opposed to a sweet/savory flavor sometimes found at PF Changs. But even Wes was impressed by this recipe.

I also made a "smoothie" from Frozen berries (strawberries, blackberries, and I think a few blueberries made their way in, but I wasn't too worried about it). Then I poured in coconut water from Fresh & Easy. It's just coconut flavored water—infused with "essence of coconut" or something—and has no sweetener. Then I added 2 Stivia packets. Blend away! It was a nice filling snack. The frozen berries mean you don't have to add any ice, and it kept me feeling full longer.

  1. this sounds deeeelish! will totally try it out. and i was just thinking about a berries and water only type smoothie with some just-about-done type strawberries. great ideas!
