Hmmm....food

So, i am not a great picture taker, so i didn't take any of my last two meals, but they were TASTY!!!!
So, last night i decided i was going to take a suggestion from Emily and add to it. She had told me about cutting brussel sprouts in half, drizzling them with a tiny bit of olive oil, salt, pepper, and baking till the blacken on the edges!. I usually HATE brussel sprouts but i decided to try it.

I put the oven to 425 degrees, then after they'd been in there about 6 minutes, I added sliced red onions, then after 3 minutes of that (give or take a minute), i added salmon filets that i had marinated with some low sodium soy sauce and lime juice. Then i kept it in the oven till the salmon was done (about 3 minutes on each side, flipping halfway through). The whole meal only took me 15 MINUTES!!! It was incredibly yummy!! I never knew brussel sprouts could taste so good. My husband said they tasted more like roasted pistachios, i actually agreed. And the leaves of the sprouts that charred were sooooo amazing, i thought i would try separating some brussel sprouts into just leaves, and then burn them in the oven and put them on top of a good vegetable soup or on a boring salad!

Next, for lunch today, i cut up 1 link of chicken apple sausage (make sure you get the chicken sausage that has NO sugars added or corn syrup! you want the all natural kind!). i cooked it in a fry pan, then added 3 egg whites (this is like having 1/2 allowed of each, so it equals 1 protein serving), and scrambled. I forgot to also saute some onions with the sausage. that probably would have been incredible! So, I ended up with a scramble with chicken sausage. I put some salsa fresca on top, and hmm......i ended it with some strawberries and blackberries. I am full and happy!
