Southwest Lime Chicken

I've started buying the frozen, pre-grilled chicken breasts at Fresh & Easy in a bag (but I am sure you can get them anywhere...they come in strips, too). They taste like restaurant chicken. I grilled one up in a pan to thaw. When it was thawed a bit, I cut it into chunks, then added green salsa and let it simmer for a bit. Move that to a plate and cover in foil. Add corn (I used frozen) to the pan and frill until almost browned (mine was even starting to pop). Then slice up 1/2 an avocado, and add it all to the plate. Squeeze lime over everything, salt & pepper to taste. This was so zesty and really yummy. This would also make a great salad, especially when we can add black beans and some corn strips. Dude! I should have added cilantro. I have it growing outside. Silly me. (Wes has been quoting Bill & Ted lately and my "dude" quota has risen considerably.) 


Question about the shake: Kirsten, what powder are you using? And Emily, I bought a 4 pack of muscle milk at Walgreens in a bind, and got it home to find out it was not "Light" and a slightly larger size (11 grams of fat vs. 4 grams). Are there any suggestions for the shake? Is the Light shake better? Is there a specific size/oz we should be drinking? Thanks, ladies!

Question about dairy: Are we allowed to have milk of any kind? I'm just wondering about my calcium intake. I haven't added cheese yet, and I should do that for sure.


**I'm finding the addition of corn to my meals makes a huge difference in satiety and curbing my sweet-tooth. Especially cut from the cob.

  1. for the shake i really really love Syntha6. I've had two trainer friends tell me it's the best out there! and i tend to agree, atleast from the taste standpoint :-), since i don't know enough about types of protein shakes to have any more input than that! but i've been buying it online through amazon for ALOT cheaper than the stores. I would fill my glass to about 12 oz, then add a scoop to 1 1/2 scoops (depending on what phase i was on..you'll see) and i found it to be filling. sometimes i would blend it really fast with some berries using my hand blender for my substance!

    As far as dairy, yes, that was also a concern i always had...what about the calcium since milk is never really introduced. From what i understand, calcium is also in the vegetables, etc., we should be eating, but we should also have a good multipurpose vitamin with calcium! I also always had a big helping of fage for breakfast and that is riddled with calcium :-).

  2. when i am having a major sweet tooth and i can't have yogurt, i have a diet coke or other diet soda. He marked it off the list only b/c he says people get super addicted to it, and it can be hard to just be an occasional drinker of the stuff, but he said that it is fine if you want to have one occassionally (not 3 a day of coure!), but it helps me feel like i am getting a little treat :-)

  3. I just was going over what protein powders we have at home, and my husband got NO Carb Isopure. It's been working well, my only concern is that it says "not for weight management or for losing weight". I don't know if that means that it would be counter productive on that aspect, but i will ask my friend sean who recommended it!

  4. I really LOVE the taste of the Muscle Milk. I just am thinking a powder might be nice if I wanted to mix one up myself with berries, etc. Thanks so much for all this awesome info!
