Hash it out, toss it up

OK, that was cheesy. I've been writing product reviews over at The Blog Guidebook, so I have my "writers cap" on. It's one of those rainbow ones with a yellow spinner on top, and makes me sound nerdy...

OK, here you go. No photos, sorry! But these are really tasty and filling:

Veggie Stash Hash:
Any veggies you like roasted. I prefer zucchini, tomatoes, and corn. But green beans would be a great addition. The corn is a must, because it adds some sweetness. And I either use frozen kernels, or cut it off the cob. Drizzle with a little olive oil and season to taste. Roast it for 20-30 minutes at 450 or 500. Top with grilled chicken, and eat some avocado on the side (with balsamic drizzled on top). And who the heck eats a third of an avocado? Are you guys doing that? I'm going with half of a smallish one.


Blackberry Chicken Salad:
Baby Spinach
Blackberries
Avocado
Grilled Chicken
A little olive oil and balsamic
Salt, Pepper, packet of Stevia
Toss and enjoy!

A small cheat:
So I admit I have been using a little oil on things even when I have an avocado in the same meal. But I can't eat a salad with just vinegar! So I drizzle a little over the whole thing. It's not much. And at least I have managed to only "cheat" with things on the list. (Except for a few jelly beans that leapt spontaneously into my mouth yesterday from the last of the Easter candy, and the spoonful of fat-free refried beans when I was making the kids burritos. Mmmmmmm....burritos.)
