Carb Crash

So for the past two days I've been feeling super shaky and kinda like I might pass out, no matter how much healthy snacking I am doing between meals. I looked it up, and it's called carb crash (or ketosis), and it happens around day three of a low carb diet. Bingo! That's what's going on. It will go away in a couple of days, but in the mean time it still kinda sucks. A few sites recommend eating fruit, nuts, and green veggies together to combat this annoyance. I notice I feel better if I eat some nuts/oil in between my 3 hour increments. If it gets me through a few days, I'm not gonna sweat it (and I won't be breaking out in cold sweats anymore, either). No one needs a wimpy mom!

Strawberry Spinach Salad:
As much baby spinach as you like
Sliced strawberries
Handful of nuts (I used walnuts because they have good Omega-3s)
Drizzle of Olive Oil
Balsamic Vinegar
Some Stevia for sweetness
(Seasame seeds or asparagus or cucumber might also be a good addition)
Toss & Enjoy!


And no, I didn't take this photo...I grabbed it off some foodie guru's site. :) By the way—do we all have white, modernist round kitchen tables? I think I see one peeking out from Jessica's plate down there...

  2. Oh my entire house is Ikea. No shame in that game! And while I love the table, it's starting to bubble in places and lose its paint. Kind of makes me crazy. :)

  4. easter party!?! funnnn. i was prepping stuff last night by myself and you'll be proud, i didn't eat a thing (and BELIEVE ME i could have). i get so sick it has scared me straight.
